The Quik Cook! International Favorites: Denmark

The Quik Cook! continues with national cuisine favorites from around the world from Afghanistan to Zimbabwe! Today’s port-of-call: Denmark for Frikadeller!

Frikadeller (Danish Meatballs)

Prep Time: 30 min
Cook Time: 25 min
Serves: Approximately 30 meatballs, 4 to 6 servings

Ingredients:
2 slices fresh white bread
1/4 cup milk
3 tablespoons clarified butter, divided
1/2 cup finely chopped onion
A pinch plus 1 teaspoon kosher salt
3/4 pound ground chuck
3/4 pound ground pork
2 large egg yolks
1/2 teaspoon black pepper
1/4 teaspoon ground allspice
1/4 teaspoon freshly grated nutmeg
1/4 cup all-purpose flour
3 cups beef broth
1/4 cup heavy cream

Directions:

1. Preheat oven to 200 degrees F.

2. Tear the bread into pieces and place in a small mixing bowl along with the milk. Set aside.

3. In a 12-inch straight sided saute pan over medium heat, melt 1 tablespoon of the butter. Add the onion and a pinch of salt and sweat until the onions are soft. Remove from the heat and set aside.

4. In the bowl of a stand mixer, combine the bread and milk mixture, ground chuck, pork, egg yolks, 1 teaspoon of kosher salt, black pepper, allspice, nutmeg, and onions. Beat on medium speed for 1 to 2 minutes.

5. Using a scale, weigh meatballs into 1-ounce portions and place on a sheet pan. Using your hands, shape the meatballs into rounds.

6. Heat the remaining butter in the saute pan over medium-low heat, or in an electric skillet set to 250 degrees F. Add the meatballs and saute until golden brown on all sides, about 7 to 10 minutes. Remove the meatballs to an ovenproof dish using a slotted spoon and place in the warmed oven.

7. Once all of the meatballs are cooked, decrease the heat to low and add the flour to the pan or skillet. Whisk until lightly browned, approximately 1 to 2 minutes. Gradually add the beef stock and whisk until sauce begins to thicken. Add the cream and continue to cook until the gravy reaches the desired consistency. Remove the meatballs from the oven,cover with the gravy and serve.

Irish Lamb-And-Barley Soup

Ingredients: 
cooking spray
1 1/4 lbs lean boneless leg of lamb, cut into 1-inch cubes
2 (10 1/2 ounce) cans beef broth
1 cup water
2 cups coarsely chopped green cabbage
1 cup chopped carrot
1 cup chopped onion
1 cup chopped peeled rutabaga
1/3 cup uncooked quick-cooking barley
1 teaspoon dried thyme
1/4 teaspoon garlic powder
1/4 teaspoon ground allspice
1/4 teaspoon pepper
1 bay leaf

Directions:
1. Place a Dutch oven coated with cooking spray over medium-high heat until hot.

2. Add lamb; cook 5 minutes or until browned. Add broth and remaining ingredients; bring to a boil.

3. Cover, reduce heat, and simmer 20 minutes or until the lamb is tender, stirring occasionally.

4. Discard bay leaf.

Ingredients:
1/2 tablespoon butter
1 slice cooked bacon, crumbled
2 eggs
1 tablespoon light cream or 1 tablespoon milk
2 tablespoons blue cheese, crumbled
salt and pepper, to taste

Directions:
1. Melt butter in frying pan over medium heat. Add bacon and heat until sizzling. Meanwhile, whisk eggs and cream together in a small bowl. Pour over bacon.

2. Allow to cook until firm enough to flip. Cook until the underside is firm.

3. Sprinkle 1 1/2 Tbls. of blue cheese over half the omelette and fold the other half of the omelette over the top. Sprinkle remaining blue cheese over the top and sprinkle with salt and pepper.

Grilled Tilapia with Smoked Paprika and Parmesan Polenta

 

Yield: 4 servings (serving size: 1 fillet and 1 cup polenta)

Ingredients:
Polenta:
4 cups fat-free milk 
1 cup quick-cooking polenta
1/4 teaspoon salt 
1/3 cup (1 1/2 ounces) grated Parmesan cheese 
Fish:
1 1/2 tablespoons olive oil 
1 teaspoon smoked paprika
1/2 teaspoon garlic powder
1/4 teaspoon salt 
1/4 teaspoon freshly ground black pepper 
4 (6-ounce) tilapia fillets 
Cooking spray

Directions:
To prepare polenta, bring milk to a boil in a medium saucepan; gradually add polenta, stirring constantly with a whisk. Reduce heat, and cook 5 minutes or until thick, stirring constantly; stir in 1/4 teaspoon salt. Remove from heat. Stir in cheese; cover and keep warm.
To prepare the fish, heat a large nonstick grill pan over medium-high heat. Combine oil, paprika, garlic powder, 1/2 teaspoon salt, and pepper in a bowl, stirring well. Rub fish evenly with oil mixture. Coat pan with cooking spray. Add fish to pan; cook 4 minutes on each side or until fish flakes easily when tested with a fork or until desired degree of doneness.
Note:
The tilapia can be prepared either in a grill pan on the stove or over the coals on an outdoor grill.

1 can (15 ounces) kidney beans, drained and rinsed

Directions:
1. Brown ground beef in large skillet on medium-high heat; drain if needed.

20-Minute Shrimp and Couscous With Yogurt-Hummus Sauce

This speedy shrimp dish gets you whole grains, protein, vegetables and fruit all ready to go in 5 minutes (Pro tip: prep the couscous while the shrimp broils.)

Ingredients:

1 cup whole wheat couscous

1/4 cup dried apricots, chopped (or golden raisins)

2 tablespoons olive oil

1/2 cup 2-percent plain Greek yogurt

1 tablespoon prepared hummus

2 tablespoons chopped fresh mint or dill Kosher salt

1 1/4 pounds medium shrimp, peeled and deveined, tails removed

1 cup cherry tomatoes, halved

1/4 to 1/2 teaspoon hot paprika

Juice of 1/2 lemon

Directions:

Preheat the broiler to high. Combine the couscous, apricots and 1 tablespoon of the olive oil in a bowl. Add 1 1/4 cups very hot water, cover with plastic wrap and let sit until all of the water is absorbed and the couscous is tender, about 5 minutes.

Stir together the yogurt, hummus, mint and 1 to 2 tablespoons water in another bowl. Season with salt and set aside.

Toss the shrimp, tomatoes, the remaining 1 tablespoon olive oil and paprika together. Spread out on a baking sheet and broil until the shrimp is opaque and cooked through, about 4 minutes. Drizzle with the lemon juice.

Fluff the couscous with a fork. Divide the shrimp and couscous among 4 plates. Scrape any of the drippings from the baking sheet into the yogurt-hummus sauce. Serve the shrimp and couscous with the sauce.

Ingredients:

  • 1 pound ground beef
  • 2 packages (3 ounces each) Oriental-flavored ramen noodles
  • 1 package (16 ounces) frozen stir-fry vegetable blend
  • 2 cups water
  • 4 to 5 tablespoons soy sauce
  • 1/4 teaspoon ground ginger
  • 3 tablespoons thinly sliced green onions

Directions:

  • In a large skillet, cook beef over medium heat until no longer pink; drain. Stir in contents of one noodle seasoning packet; set aside and keep warm.
  • Break the noodles; place in a large saucepan. Add the contents of second seasoning packet, vegetables, water, soy sauce and ginger. Bring to a boil. Reduce heat; cover and simmer for 6-10 minutes or until vegetables and noodles are tender. Stir in beef and onions. Yield: 4-6 servings.
