Meatloaf Cupcakes

INGREDIENTS

  • Meatloaf
  • 1 teaspoon olive oil
  • 1 cup finely chopped onion
  • 1/2 cup finely chopped carrot
  • 1 teaspoon dried oregano
  • 2 garlic cloves, minced
  • 1 cup ketchup, divided
  • 1 1/2 pounds ground beef, extra lean (raw)
  • 1 cup bread crumbs
  • 2 tablespoons prepared mustard
  • 1 teaspoon Worcestershire sauce
  • 1/4 teaspoon freshly ground black pepper
  • 2 large eggs
  • Cooking spray
  • Mashed Potatoes
  • 4 cups cubed peeled Yukon gold potato (about 2 pounds)
  • 1/4 cup 2% reduced-fat milk
  • 1/4 cup low-fat sour cream
  • 3 tablespoons butter
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • Garnish
  • 3 tablespoons chopped chives
  • 4 pieces of bacon cooked and them chopped

DIRECTIONS

    Preheat oven to 350°.

    Heat the olive oil in a large nonstick skillet over medium-high heat. Add chopped onion, chopped carrot, dried oregano, and minced garlic; sauté 2 minutes. Cool.

    Combine onion mixture, 1/2 cup ketchup, and the remaining ingredients except cooking spray in a large bowl.

    Spoon the meat mixture into 12 muffin cups coated with cooking spray. Top each with 2 teaspoons ketchup. Bake at 350° for 25 minutes or until a thermometer registers 160°. Let stand for 5 minutes.

    While the meatloaf is cooking, make the mashed potatoes. Place potato in a saucepan; cover with water. Bring to a boil; cover, reduce heat, and simmer 10 minutes or until tender. Drain. Put potatoes into a ricer for best results. Return potato to pan. Add milk and remaining ingredients; stir with a spoon to desired consistency. If they are not creamy enough for you, add up to 1/4 cup more milk – although they need to be stiff enough to pipe on top.

    Put the potatoes into a pastry bag with a wide star tip and pipe the mashed potatoes on top of the meatloaf. Sprinkle with bacon crumbles and chopped chives.

DC-Area Student Accepted at 5 Ivy Leagues

Last week, the nation heard about 18-year-old Chad Thomas, a senior at Booker T. Washington Senior High in Miami, who received 150 scholarship offers for his prowess on the football field and ability to play nine instruments.

Now, comes Avery Coffey, a senior at Benjamin Banneker Academic High School in Washington, D.C., who applied to and was accepted at five Ivy League universities, including Harvard, Princeton, Yale, Brown and the University of Pennsylvania, according to Fox News.

Four have already extended very generous financial aid packages, while Harvard is still crunching numbers to formulate its offer, the report says.

Coffey, who boasts a 4.3 grade point average, grew up in a single-parent household in D.C.’s Ward 8, one of the poorest areas in the city. His mom works as a technician at Children’s Hospital, the report says.

“You can go anywhere you want to, pursue any career that you want to, and you shouldn’t let anybody hinder you from trying to reach your goals,” he told Fox News as advice to younger students.

Coffey, who plans to major in finance, hasn’t yet made up his mind about where he plans enroll. But he’s giving close consideration to the University of Pennsylvania and Harvard, the report says.

Banneker is known for its strict rules and policies. None of its 439 students are allowed to bring cell phones into the building. Nor are they allowed to enter their lockers during the school day, a measure designed to discourage loitering in the halls.

Breakthrough Study in Freezing Patients to Save Gunshot and Stabbing Victims

Suspend animation could buy gunshot and stabbing victims the few precious seconds separating life from death if a Pittsburgh hospital is correct.

After a three-year approval process, a groundbreaking trial starting as early as next week at the University of Pittsburgh Medical Center will evaluate whether the new technique can save lives.

‘We just want to review everything one more time,’ said trial leader and professor of critical care Dr. Samuel Tisherman. ‘Our main goal is to show that it can work, so we want to be selective about the patients we enroll.’

Doctors believe that by freezing a patient’s body they can buy themselves another hour to fix life-threatening injuries

The patients will be victims of fatal gunshot and stabbing wounds so close to death their hearts have stopped beating before they reach the hospital, ABC News reported.

The trial will take two years.

‘The standard of care at that point is to intubate them, give them fluids and blood and open up the chest,’ Tisherman said. ‘If you quickly find something you can fix in there, like a source of bleeding that you can stop, then there’s a chance of survival. But if you don’t, that’s when we’ll switch to EPR.’

Emergency Preservation and Resuscitation will replace the patient’s remaining blood with cold saltwater, lowering their temperature to 50 degrees. This will freeze vital cellular functions.

‘As you get colder, you don’t really need red blood cells,’ Tisherman explained. ‘Then the trauma surgeons have more time to find the problem.’

This will give doctors little less than an hour to fix any problems, then reverse the freeze with ‘reperfusion,’ a process that fills the body with blood.

‘The surgeon will only do what he or she absolutely has to do,’ Tisherman said. ‘Little things can get done later.’

The trial will be coordinated between emergency department staff, trauma surgeons, cardiac surgeons, and perfusionists.

EPR will need 10 patients to test the trial and compare the results against those obtained treating 10 uncooled control patients.

The U.S. Food and Drug Administration approved the test under an ‘exception from informed consent’ provision allowing for ‘urgent intervention’ for life-threatening situations.

According to a 2006 study available at PubMed, fewer than 8 per cent of patients survive traumatic cardiac arrest.

‘Enrollment has to be done basically at a moment’s notice,’ Tisherman said, explaining that three trauma surgeons are now trained to recognize potential trial candidates. ‘If one of them is in the building and the right person comes along, then we can go ahead.’

A patient admitted when no trained trauma surgeon is available will be part of the control group.

FBI Fugitive Arrested Days after Being Added to Most Wanted List

An accused gang banger was arrested Friday for the murder of his girlfriend and her toddler son only days after being put on the FBI’s ‘Most Wanted’ list, federal authorities said.

Juan Elias ‘Cruzito’ Garcia, 21, a reputed member of the murderous international gang known as MS-13, was taken into custody after voluntarily returning to the US to face the charges, according to an FBI press release.

Garcia, who has ties to El Salvador, Nicaragua, Honduras, Guatemala and Panama, is accused in the 2010 execution-style shooting of the mother and child in Central Islip, New York, authorities said.

Garcia’s girlfriend Vanessa Argueta, 19, and her son, Diego Torres, 2, were victims in the brutal slaying.

He Friday surrender came just two days after being put on the most wanted list, it was the result of a coordinated effort between Nicaraguan authorities and US law enforcement.

American authorities sent aircraft to bring Garcia to New York.

Garcia was threatened by rival gang members after an argument with Argueta. He accused her of going behind his back to the gang, the FBI said.

Garcia and two fellow gang members shot her and her son dead after luring them to a wooded area in February 2010, said the FBI.

The mother was killed first, causing the young boy to start crying, said investigators, He was then hit by a bullet that knocked him down, the FBI said.

‘Torres got back up and clutched onto Garcia’s leg’ before he was shot in the head, according tot he FBI.

Fellow accused gang members Adalberto Ariel Guzman and Rene Mendez Mejia are awaiting sentencing after Mejia pleaded guilty to the murders and Guzman was found guilty at trial.

Gang leader Heriberto Martinez has been sentenced to three life terms, plus 60 years, in prison for multiple convictions that include murder, racketeering and conspiracy.

‘Love & Hip Hop Atlanta’ Star Benzino Shot At Mother’s Funeral

“Love & Hip Hop Atlanta” star Ray Benzino is allegedly in critical condition after being shot at his mother’s funeral, according to various local reports.

There was reportedly a fight between family members and Benzino was shot three times by his nephew as he was leaving the funeral service in Duxbury, Massachusetts, a suburb of Boston.

One Twitter user posted the following picture of a hearse with police tape around it:
Benzino has been expressing his grief at his mother’s passing for the last week on social media, receiving support from his friends and castmates, including Stevie J.

Last week, the rapper and founder posted the following picture to Instagram with the caption:

“God knows I have been through alot in my life, BUT EVERY INCH OF GOOD, KINDNESS AND LOVE IN MY SOUL IS BECAUSE OF THIS WOMAN, A BIG PART OF ME IS LOST NOW AND I WILL NEVER BE THE SAME, MA WORDS CANT EXPRESS MY LOVE FOR YOU.I WILL MISS EVERY BREATHING MOMENT, I DONT KMOW HOW I WILL CONTINUE KNOWING YOU ARE NOT HERE. Im lost.”

State Police arrested a male suspect this afternoon after a 48-year-old man was shot during a funeral procession in Duxbury on Route 3 southbound near Exit 11, according to authorities.

The shooting occurred at 11:55 a.m., and the victim was taken to South Shore Hospital with non-life-threatening injuries, according to a statement from Plymouth County District Attorney Timothy J. Cruz.

State Police said the initial report stated the shooting occurred after an argument between family members, but investigators are now working to determine what sparked the violence. In his statement, Cruz said that a person driving a Bentley shot the driver of a red Dodge SUV, who got out of his car and was taken to the Duxbury Police Department by a passerby, before being taken to the hospital.

The driver of the Bentley was arrested and charged with armed assault with intent to murder, according to Cruz. He will be arraigned Monday in Plymouth District Court. His name was not released.

Father William Williams of St. Peter’s Church in Plymouth, where the funeral procession was headed from Quincy, said that the family arrived at the church late but that the funeral was held.

When he looked out of the church to see the funeral procession arrive, he said, he saw blood smudges on the limousine and the hearse. The family was upset, he said, but did not speak about the shooting.

The highway was closed after the shooting and there are no further details at this time.

Benzino is co-founder and former co-owner of premiere Hip Hop magazine The Source. He stepped down from his position as chief brand manager in 2005.

We frequently hear about the interesting things that go on backstage at rap concerts, but rarely do we ever actually get to see what really goes down. Well, until now that is. Rapper 2 Chainz and his team captured a young woman’s thirsty attempt to meet a member of his entourage named Cap 1. And well, it’s quite embarrassing.

It’s not really clear how the woman, who identified herself as Tina, made it backstage, but she was pretty hell-bent on seeing Cap 1, who she says she met on Instagram.

“You ain’t gonna catch nothing out here but a cold, baby. Put something on your back, baby,” 2 yells out to Tina before the entourage bursts into laughter.

2 and the camera man continue with their shenanigans before finally allowing Tina to meet Cap. Cap, however, doesn’t appear to be the least bit interested.

“Nah, I’m straight,” he says, barely looking at Tina.

So of course, the horseplay continues.

“I think you should go that way,” 2 tells Tina before pointing towards the door. “Because while you’re back here, you’re in blog territory.”

Apparently still confused and failing to realize that she’s the butt of their jokes, Tina says:

“Oh sh*t, this is going on a blog for real? Do I look good?”

After letting the guys have their fun for a little longer, another man encourages the girl to just leave.

“Go on and walk out the door baby. Baby, listen to me, just walk out the door.”

Tina left without putting up a fight, but she now says that she has plans to sue the “I’m Different” rapper.

“For the record I’m not a thot, I reset my account because I had family on it. Tauheed Epps aka 2 chainz you will definitely be hearing from my lawyer,” Tina reportedly wrote in an Instagram post.

“Extra extra. See you in court soon #lankylizard @hairweavekiller,” she later followed up. “I feel like @hairweavekiller should feel as much embarrassment as I have endured these last couple of days for what he has done to my life, he has not apologized publicly and tries to contact me privately. Director Amma Asante On Why Her New Historical Film “BELLE” Isn’t a Rags-To-Riches Story

Last year we reported on the upcoming film, Belle, based on the life of Dido Belle, which hits the silver screen on May 2. Dido Belle was a biracial woman who lived in 18th century England and was the daughter of British Naval officer Captain Sir John Lindsay and an African woman named Maria Belle. Director Amma Asante says she was inspired to bring Belle’s story to life when she came across a 1779 painting of Belle and her cousin, Lady Elizabeth Murray, which was the first painting to showcase a black person on the same eye level as a white person.

In an interview with Elle Magazine, Asante openly spoke about that discovery and more, including how black people fit into European history, feminism, and why Belle is an “UnCinderella” story. Below are highlights from Asante’s interview.

ON THE LINE IN THE MOVIE WHERE BELLE SAYS, “I DON’T KNOW THAT I FIND MYSELF ANYWHERE.”

As women, haven’t we all been there at some point—where we just don’t know where we find ourselves? We don’t know where to look and find that reflection of who we truly are. For me, Belle is a movie about instinct versus conditioning. Every character, including Dido and quite clearly Lord Mansfield, has to battle that conflict in themselves. But this is also a story which begs the question, “Who defines us—society or us?” If I say, “I’m an amazing director,” and society and the critics say, “No, you’re not,” what does that mean to my chances if I have the drive in myself to be successful? If Dido is a black woman who speaks like a lady, walks like a lady, talks like a lady but doesn’t look like one we’ve seen before, and society says, “No, you’re not,’” does that mean she isn’t a lady? And if all of society says, “You are a lady,” and she doesn’t feel like one because she feels like a child of a slave—what is the most important? That’s the question I feel like I’m trying to negotiate throughout the entire film.

ON BELLE BEING A KEY FIGURE IN BRITISH HISTORY AND WHETHER SHE AND HER FUTURE HUSBAND (LAWYER JOHN DAVINIER) CONTINUED TO BE A FORCE IN POLITICS

Not really. They got married and had sons, but they didn’t marry until Lord Mansfield died. We can never be sure that Dido felt she couldn’t leave Kenwood, the Mansfield manor house, until he died. It was very important to leave the film on a triumphant note—Lord  Mansfield’s stunning judicial blow against slavery. That’s what happened in real life, so there was a real sense of commitment, loyalty, and love on her part. That’s what brought me to the movie.

ON TACKLING THE INFAMOUS ZONG MASSACRE IN WHICH 143 SLAVES WERE RUTHLESSLY THROWN OVERBOARD FOR THE INSURANCE MONEY, IN THE FILM

My dad died the night before we shot those scenes, so that father-daughter element of the story was so important for me to get right, and so important that we understand that this wasn’t just a moment for the larger story. It was also important for the personal story, the relationship between this unexpected daughter and a kind of paternal figure that we’ve never seen on film or TV. We’ve never seen a white guy love a black child in this way on screen before. And it’s not a slave owner/slave scenario. Lord and Lady Mansfield (Emily Morton) had no children, so it’s a proper paternal relationship in which he adores and loves her as his own child—just as they love and adore Elizabeth (Belle’s white cousin, played by Sarah Gadon, who was also brought up in the Mansfield household) as well. For me, it was really important that we do not see this as a Cinderella fable. This isn’t a rags-to-riches story in that way. Dido’s development, her coming of age and going from girl to woman, and her political awakening with John Davinier, parallels the story of the Zong.

ON INTERWEAVING RACE AND MONEY AND BELLE CHOOSING TO MARRY AN EDUCATED COMMONER, WHICH WAS UNHEARD OF AT THE TIME

In her own journey Dido has to come to terms with who she is as a woman, who she is as a biracial woman, who she is as the child of a slave she never had a chance to know and an aristocratic family who against all odds wanted her to be safe and thrive. You know, someone who is half-black and half-white is half of many things: a wealthy woman in a complex society where nobody looks like her, and most difficult, not to have her seeming to be asking for more, when actually what she’s asking for is equality.

7 Easy Ways to Build Strong Bones

Bone building reaches a peak during adolescence but then slows after age 25. In addition to this natural bone loss, we’re less likely to perform high-impact, bone-stimulating exercises (such as jumping) after age 50. This adds up to an increased risk of osteoporosisand bone breaks and fractures.

Fortunately, you can build stronger bones at any age.

A recent study published in the American Journal of Health Promotion shows that people who jumped 10 times twice daily increased bone density by .5 percent compared with those who didn’t and lost about 1.3 percent. (Note: the study did not include women with osteoporosis; jumping is not recommended in cases of weak bones.)

Experts offer these seven easy tips for men and women to keep bones strong throughout their lives:

1. Snack on yogurt and other calcium-rich foods. Including yogurt, cottage cheese and other low-fat dairy foods adds bone-strengthening calcium to your diet. “In addition to dairy products, choose fish with bones such as salmon, sardines or whitebait,” says registered dietitian Laura Jeffers.

For additional benefits, serve these foods with a side of dark leafy green vegetables or broccoli, which also contain calcium. Other bone-building snacks include almonds, dried figs, calcium-fortified tofu and, if you prefer non-dairy, soy milk.

2. Take a hike. Try to engage in at least 30 minutes of exercise every day, by jogging, brisk walking or aerobics — at whatever level of ability, says Susan Randall, of the National Osteoporosis Foundation (NOF). “As you build stamina, increase the duration and intensity of your exercise,” she says.

To see real improvements in bone density, you need to push your intensity, says Cleveland Clinic physical therapist Maribeth Gibbon. “Increasing your pace for short intervals or going up and down hills will place appropriate forces on your bones.”

Alternate higher-intensity exercises two to three days a week with lower-intensity activities four to five days a week for best results.

3. Lift weights. “All women begin to lose bone mass after menopause,” says Randall, “so the stronger the muscle and the stronger the bone mass before menopause, the better.” Men should lift weights, too.

Resistance exercise requires muscular strength, which improves muscle mass and strengthens and supports bone. Examples of resistance training tools include free weights, wrist weights, weighted vests, exercise bands and resistance machines found at gyms and health clubs. Strive for two to three resistance training workouts a week.

4. Consider a supplement. Your calcium needs increase with age, making it a challenge to take in enough calcium through food alone. The U.S. recommended daily allowance for calcium is 1,000 mg a day during your 20s, 30s and 40s.

After menopause, most women need 1,000 to 1,500 mg a day unless they take hormone therapy, says Jeffers. Men between 50 and 70 years old need 1,000 mg a day; men over 70 need 1,200 mg.

“And since your body absorbs only 500 mg of calcium at a time, divide your dosages out over the course of the day,” Jeffers says. Check with your doctor before starting supplements to find out what amount is right for you.

5. Take a daily “D.” To help absorb calcium, most adults need 1,000 to 2,000 IU of vitamin D daily, saysDr. Andrea Sikon of Cleveland Clinic. “Combined calcium-vitamin D pills usually do not meet this requirement. And most of us who live north of Atlanta do not get enough vitamin D the old-fashioned way — from the sun. Taking a vitamin D supplement ensures you meet your daily needs.”

Even if you take medications such as bisphosphonates (e.g. Fosamax), you still need vitamin D and calcium as building blocks, says Sikon.

6. Stomp your feet. Similar to the noted benefits of jumping for bone density, simply stomping your feet can also help increase bone density in your hips, says Gibbon.

“Do four stomps on each foot twice a day with enough pressure to crush a can,” she says.

Make it a habit to stomp on cans before you toss them into the recycle bin.

Gibbon recommends performing exercise that is site-specific, meaning it must target the areas most prone to fracture: spine, hips and wrists. Push-ups and planks work the wrists and the NOF recommends theseexercises to target the spine.

7. Stretch it out. Round out your workouts with stretching to help avoid a hunched-over posture down the road. “Posture, balance, flexibility, and spine strengthening exercises can help you with better alignment of your body now and in the future,” says Randall.

Lengthening tight muscles reduces back pain and promotes good spinal mechanics and posture, says Gibbon.

Muscles that are commonly tight include those you use to arch your back (spinal extensors); raise and rotate your shoulders (shoulder elevators and external rotators); lift your knees (hip flexors) and pull your feet toward your body (ankle dorsiflexor). P

Perform stretches slowly and smoothly, “to a point of stretch, not pain,” Gibbon advises. For maximum benefit, do stretches once or twice a day, holding each stretch for 20 to 30 seconds.

Belgian husband leaves wife of 19 years after discovering she was a man

A Belgian husband has spoken of his ‘horror’ after learning his wife of 19 years used to be a man.

The duped 64-year-old – named only as Jan – said he had ‘no clue’ his bride had been born a boy.

The shocking revelation only emerged after almost two decades of marriage when a cousin from his wife’s native Indonesia finally exposed the truth.

Jan told how he met ‘Monica’ in 1993 when she arrived in his home town of Antwerp as an au-pair to his sister’s children.

He described as her ‘very beautiful and feminine’ – but said he now understood why she was ‘no good at ironing’.

Jan told Belgium’s Nieuwsblad daily paper: ‘My second marriage was on the rocks at the time and we quickly fell in love.

‘I thought she was an attractive woman, and she was all woman – she had no male traits.

‘She was 27 years old at the time, so I asked her if she wanted children.

‘I was glad when she said she didn’t as I was 44 and already had two of my own.

‘Over the years she said she was taking the pill, and even during sex I never noticed anything, though now I understand why she always used a lubricant, which is apparently normal among transexuals.

‘She was always a good mother to my children, and also a fantastic cook, though we wasn’t that great at cleaning and ironing – and now I know why!’

But Jan said the relationship had begun to suffer over the past two years as she insisted on staying out late on her own wearing ‘very revealing outfits’

He added: ‘She would wear tiny tops that revealed a lot of flesh and had more than 100 pairs of shoes.

‘I also caught her ogling pictures of young men on the Internet.

‘But I didn’t suspect a thing until a cousin of hers came to visit and let something slip.

‘I mentioned it to my son and he said he’d heard a rumour too that Monica used to be a man.

‘One evening I confronted her and she finally confessed she had been born a boy and had a sex change operation.

‘My world collapsed in a few seconds. I was horrified. I feel like have been violated for almost 20 years.’

The couple are still living under the same roof after a judge refused to grant Jan an order to evict her.

But he added: ‘We live in separate rooms and rarely speak. What Monica has done to me and my family is unforgivable. I just want her out of my life.’
