Mini Quiche Cups – Healthy High Protein Grab; Go Snack

It’s easy to get busy and either make poor nutrition choices, or skip meals all together. Thinking ahead and giving yourself healthy options that you can quickly grab, even when your schedule is hectic, is a good way to make it easier to eat clean and maintain a healthy bodyweight.

Here’s why this is a good option for a snack or meal (if you eat a few of them)

  • Low in calories, all clean ingredients
  • A good source of protein
  • Very high in Vitamin B6, A, and selenium
  • High in iron, riboflavin, pantothenic acid and Vitamin B12

What you’ll need:

1 Large onion, diced
8 Ounces Mushrooms, chopped
1 Tbsp Olive oil
1 Tbsp Italian seasoning
2 Garlic cloves, minced
Salt and Pepper to Taste*

4 Cups of Spinach

12 Eggs

Saute all of the vegetables in the olive oil on medium heat. Once the onions are browned or transparent, add in the spinach and cook for a couple more minutes. Move the sauteed veggies to a mixing bowl, add the eggs and mix thoroughly. Pour the mixture into a greased muffin tin, or use baking cups as a base to keep them from sticking – we used paper cups, which worked, but tin foil would probably result in less sticking. Cook in the oven for  20-24 minutes at 350 degrees, using the toothpick trick to make sure that the center of the quiche cup is cooked all the way through.

Cool for 5 minutes before serving.

Modifications/Variations: We didn’t add any extra salt to ours, so the sodium is nice and low. If you can, it’s a good idea to bump up the flavor with other spices – garlic, basil, oregano, cumin, chili pepper, paprika, pepper, or anything else you might like. There are a lot of different, equally tasty ways to make this recipe. Add in any kind of vegetables you might have around the kitchen; tomatoes, asparagus, artichoke, and peppers are just a few of the veggies that would taste great. You can also make it more indulgent by adding cheese of your choice (to the mix, before you put it in the muffin tins).

Missing POW’s Remains Returned to His Widow 63 Years After His Death

For 63 years, Clara Gantt waited for her husband, Army Sgt. 1st Class Joseph Gantt, to return home after being declared a POW in the Korean War.

On Friday at LAX, the 94-year-old widow stood from her wheelchair and cried as her husband’s flag-draped casket finally arrived home.

“I am very, very proud of him. He was a wonderful husband, an understanding man,” said.

A Military Family Needs Your Help

This is Sergeant Major Charles Bunyan and his beautiful family. They are truly wonderful people who go above and beyond what it means to be a military family. They are people that go out of their way to help anyone in need and are happy to do it.

SGM Bunyan is an exemplary leader in the New York Army National Guard and has helped so many soldiers find their way. His wife, Joan Is always there with a helping hand, a listening ear or any support she can give. She gives love and support to so many people and asks nothing in return. Their eldest daughter Brianna, and youngest daughter Lilly are about as sweet as they come. Two incredibly pure-hearted girls raised in a home filled with love.

Tragically, on December 19th, this amazing family was dealt quite a serious blow. Brianna ( the eldest daughter, 18) died in a car accident. The pain this family is going through this Christmas season is an unbearable one no person deserves. Especially not such good, giving people. These people have brightened so many lives. Jahi McMath Case: Judge Orders California Girl to stay on Life-Support

OAKLAND, CALIF. –  A judge on Friday ordered a California hospital to keep a girl declared brain dead on life support following what was supposed to be a routine tonsillectomy.

The ruling by Superior Court Judge Evelio Grillo came as both sides in the case agreed to get together and chose a neurologist to further examine 13-year-old Jahi McMath and determine her condition. The judge scheduled a hearing Monday to appoint a physician.

The girl’s family sought the court order to keep Jahi on a ventilator while another opinion is sought. They left the courtroom without commenting.

The family says doctors at Children’s Hospital Oakland wanted to disconnect life support after Jahi was declared brain dead on Dec. 12.

After her daughter underwent a supposedly routine tonsillectomy and was moved to a recovery room, Nailah Winkfield began to fear something was going horribly wrong.

Jahi was sitting up in bed, her hospital gown bloody, and holding a pink cup full of blood.

“Is this normal?” Winkfield repeatedly asked nurses.

With her family and hospital staff trying to help and comfort her, Jahi kept bleeding profusely for the next few hours then went into cardiac arrest, her mother said.

Hospital officials said they couldn’t discuss the case because the family hasn’t given them permission to do so.

In a statement late Thursday, Dr. David Durand, the hospital’s pediatrics chief, wrote of Jahi’s case: “We are unable — without the family’s permission — to talk about the medical procedure, background or any of the details that are a part of this tragedy.”

Justine Sacco Said What about Africa, Aids and Being White?

Some people are just racists, and there is nothing we can do to change that. I’ve now come to that realization. Yes, I know that racism exists, but come on, we’re knocking on the door of 2014… and we’re still dealing with this ignorance? And what’s even worse, there is no end in sight.

Twitter and other social media sites were all buzzing a little more than usual on Friday, and I needed to find out why. A few seconds later, I came upon this tweet by Justine Sacco:

Who is Justine Sacco? Well first of all she is a racist, apparently unaware that things posted on a social media website is not the same as writing in her personal diary. Secondly, she is a public relations officer and senior director of corporate communications at InterActiveCorp (more commonly known as IAC), a Media company that owns Match.com, Vimeo and CollegeHumor.com, among others.

The tweet above was made as Justine boarded a flight to Africa and by the time she landed, her Twitter account was deleted but her tweet had already gone viral, as people all over the world voiced their disgust at the so-call humor of Miss Sacco. But her boss did not find the tweet funny. IAC, trying to separate the company from their racist employee, quickly issued this statement:

“This is an outrageous, offensive comment that does not reflect the views and values of IAC. Unfortunately, the employee in question is unreachable on an international flight, but this is a very serious matter and we are taking appropriate action.”

IAC, who also owns other popular sites like About.com, OkCupid and Urbanspoon, took further steps and removed Justine’s name from their Contact page.

Some are saying that Justine’s twitter account could have been hacked, that someone took her cell phone for example and tweeted out that message. But some digging from Buzzfeed found more offensive tweets, spanning over two years.

Buzzfeed dug these tweets up before Justine’s account mysteriously disappeared. Tweets like;

We can tell this one is not going to fade away anytime soon, as the world awaits IAC’s decision on Justine Sacco. Waiting for Palin and Republicans to somehow use this as a political strategy to “protect free speech!”

Sarah Palin’s Hypocrisy – Defends Phil Robertson’s Free Speech, But Not Martin Bashir’s

Sarah Palin, you remember her right? She is the same person who used a slavery comparison to throw out her partisan Republican talking point in a speech a few months ago. Trying to educate Mrs Palin on the harsh and horrific reality of slavery, Martin Bashir of MSNBC explained some of the circumstances these slaves lived under, and wondered if Palin would still used the comparison if she experienced some of the same treatment.

It’s free speech, constitutionally protected by the first amendment, and Bashir was absolutely correct in the point he was trying to make. But right winged media and Sarah Palin jumped and piled on, until Bashir apologized and eventually quit his job a few days later.

And now this. Phil Robertson of Duck Dynasty has shared his opinion on gays. And as misguided as his comments were, it was his right to have that opinion. And as his employer, A&E also had the right to deal with the situation the way they saw fit. They suspended the star of the Duck Dynasty show and that is where Palin and the right wing media went off the deep end.

In her Facebook page, Palin is seen in a picture with the stars of the A&E program, with the caption: Free speech is an endangered species. Those “intolerants” hatin’ and taking on the Duck Dynasty patriarch for voicing his personal opinion are taking on all of us.

Yes folks, she actually said that “free speech is an endangered species,” and called anyone trying to take away speech from Phil Robertson “intolerants.” But can’t the same thing be said for Martin Bashir’s free speech? Why is Sarah Palin advocating for Phil Robertson’s “free speech” and not Martin Bashir’s? When Bashir lost his job over his free speech, where was Sarah Palin?

In an interview on Fox, Palin again said that “this is all about free speech.” She went on to say that people “spilled blood and treasure to guarantee Phil Robertson and everybody else’s right to voice their personal opinions, and once that freedom is lost,” Palin said, “everything is lost in our country.”

The hypocrisy on this one is so thick, you can cut it with a knife.

As if it was really needed, this is just another example of the hypocrisy that is the foundation of the Republican party.

New Bill Bans Employers From Checking Your Credit Before Your Employment

Employers would no longer have the right to attain a prospective employee’s credit report, or to deny a job applicant based on credit status, under a bill introduced Tuesday in the US Senate.

Sen. Elizabeth Warren (D-MA) and six other senators proposed the Equal Employment for All Act, which would aim to end the ability of employers to run credit checks on possible employees, currently a common practice.

Advocates of the measure says employer credit checks are a high, needless barrier of entry into the labor market for many with poor scores. Supporters add that the employer checks contribute to long-term unemployment and have disproportionately impacted women, minorities, students and seniors.

“There’s little or no evidence of any correlation between job performance and a credit [report],” Warren said Tuesday, according to CNN. “[T]his is a point of basic fairness…people who get hit with hard economic blows end up getting squeezed out of the system. This is another way the game is rigged against hardworking middle-class families.”

The think-tank Demos found in a report this year that one in ten unemployed Americans were denied a job based on credit status. Demos said the report evaluations target anywhere from entry-level positions to senior management staff.

Harry Reid Hospitalized

Senate Majority Leader Harry Reid, D-Nev., was not feeling well and has gone to the hospital.

His office said in a statement, “Early this morning, Senator Reid was not feeling well and as a precaution decided to go to the hospital. Tests have been conducted and everything is normal. He is alert, resting and feeling better.

“Doctors have asked that he remain in the hospital for observation so he will not be working today.”

Reid turned 74 earlier this month.

The Senate was expected to adjourn Friday for the holiday season.

Preliminary Hearings in Renisha McBride’s Killing Begins

Carmen Beasley heard a loud noise outside in the early morning hours of Nov. 2.

She called 911, looked out and saw a car had struck her husband’s vehicle. She then saw a woman holding her hands to her head as she walked away. The woman came back, and Beasley asked if she was OK.

“She just kept saying she wanted to go home,” Beasley said today while testifying in court.

Hours later, that woman was shot to death on the porch of Theodore Wafer’s home in Dearborn Heights.

Wafer’s preliminary examination began today in 20th District Court in Dearborn Heights and will resume Thursday. Prosecutors do not have more witnesses to call, but Wafer’s defense is continuing.

Wafer faces charges of second-degree murder, manslaughter — death by weapon aimed with intent but without malice, and felony firearm in the death of Renisha McBride, 19. McBride died from a gunshot wound to her face.

Wayne County Prosecutor Kym Worthy previously said McBride was shot through a screen door. Firearms examiner David Balash, who is retired from the Michigan State Police, testified for the defense that in his opinion, McBride would not have been more than 2 feet from the gun when she was shot.

Assistant Wayne County Medical Examiner Kilak Kesha testified that McBride would have died immediately upon being shot. He said he found no evidence of close range firing based on the lack of soot or stippling.

Kesha said McBride’s injuries were too severe to determine whether she had suffered any brain injuries earlier.

Heading In The Right Direction – GDP Grew by 4.1 Percent

The third and final estimate of third quarter U.S. GDP by the Bureau of Economic Analysis is out.

GDP grew 4.1% at an annualized rate in the third quarter, according to the estimate. Economists predicted growth of 3.6%, in line with the second estimate published by the BEA earlier this month.
Personal consumption growth surged to 2.0% from the previous 1.4% estimate.

The GDP price index came in at 2.0%, as expected, while core PCE was 1.4%, slightly below the previous 1.5% estimate.

A buildup in inventories contributed 1.7% to GDP growth in Q3, unchanged from the previous estimate (private businesses increased inventories $115.7 billion in the third quarter, following increases of $56.6 billion in the second quarter and $42.2 billion in the first.)

“Coach Dave” Defends Phil Robertson – Video

Phil Robertson of Duck Dynasty said this, about gays and blacks, got an indefinite suspension from the show then offered somewhat of an apology. The remaining cast of the A&E mega-hit show then vowed to boycott the show if Phil was not immediately instated.

Of course the outrage by the predictable right wing cast of characters began. Sarah Palin for example couldn’t believe that A&E had standards that they expected their employees to abide by, and she was even more perplexed that the network chose to enforce their rules and suspend Phil for his remarks.

But Palin wasn’t the only one angered and confused by a private corporation enforcing its policies. Other right winged nuts took the Robertson suspension as a rallying cry for justice!

New Report: Raising the Minimum Wage Create Jobs

Raising the minimum wage would help the working poor and give the entire economy a boost, a new analysis finds.

If the minimum wage rose to $10.10 per hour, as Senate Democrats and President Barack Obama propose, 27.8 million workers would see their wages go up as a direct or indirect result of the boost, according to the Economic Policy Institute, a left-leaning think tank. These workers would take home about $35 billion in additional wages and they would probably spend it, as low-income people living with little financial cushion tend to do.

The result: During the initial phase-in period, the U.S. economy would grow by about $22 billion, EPI found. The growth in the U.S. economy would result in about 85,000 new jobs, according to EPI. That counters arguments from conservative economists that raising the minimum wage could actually hurt the working poor by making employers hesitant to hire more workers. (A notion that’s been proven wrong by some economists and remains hotly debated.)

The analysis is an update to a similar report released by EPI earlier this year. It takes into account the fact that five states recently raised their minimum wage, meaning workers living in those states would feel less of an impact from a federal minimum wage boost than when EPI published the original research in March.
